How Can I Make These Turkey Burgers Taste Good?


I want to put something on a turkey burger to make it less bland. Cheese helps but doesn’t cut it. I don’t remember disliking turkey burgers so much but they are just very blah… Any ideas how I can make it taste exciting?

    So ON it not IN it.
    You could cook it in a bit of teriyaki.
    I like them with sauteed onions, mushrroms peppers…. with turkey bacon, chile… with a giant slab of tomato and raw onion and a boat load of mustard. I also cover them with cajun seasoning and blacken them.
    Hope it helps. I know… they can be cardboardy.

    Spices help a lot. Here is a recipe I use and then sometimes add cajun or italian for something different. Sometimes I’ll add Dijon mustard, too.
    Actually Delicious Turkey Burgers
    3 pounds ground turkey
    1/4 cup seasoned bread crumbs
    1/4 cup finely diced onion (used food processor)
    1/2 cup finely chopped red bell pepper (used food processor)
    2 egg whites, lightly beaten
    1/4 cup chopped fresh parsley
    1 clove garlic, peeled and minced
    1 teaspoon seasoning salt
    1/4 teaspoon ground black pepper
    Worcestershire sauce
    splash of soy sauce
    Optional: Can add slight coating of flour and Montreal Steak Seasoning (McCormick) to the formed patties.
    In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties.
    Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F.
    They freeze very well. The recipe can also be used for meatballs or meat loaves.

    Creole Seasoning Blend
    1 T salt
    1 1/2 t garlic powder
    1 1/2 t onion powder
    1 1/2 t paprika
    1 1/4 t dried thyme
    1 t red pepper
    3/4 t black pepper
    3/4 t dried oregano
    1/2 t ground bay leaves
    1/4 t chili powder
    Combine all ingredients; store in an airtight container.
    Use with seafood, chicken, beef, or vegetables.
    Yield: 1/4 cup.

    Italian seasoning
    3 tablespoons dried basil
    3 tablespoons dried oregano
    3 tablespoons dried parsley
    1 tablespoon garlic powder
    1 teaspoon onion powder
    1 teaspoon dried thyme
    1 teaspoon dried rosemary
    1/4 teaspoon black pepper
    1/4 teaspoon red pepper flakes
    Mix all ingredients in a spice grinder.
    Or put in a small bowl and crush with the back of a spoon.
    Store in an airtight jar for up to 6 months.

    Chipotle Mayonnaise
    For pico de gallo sauce:
    1 large ripe tomato
    1 teaspoon chopped jalapeno pepper
    2 teaspoons chopped cilantro
    1 tablespoon finely chopped onion
    1 chipotle pepper in adobo sauce
    For creole mayonnaise:
    1 large egg
    Salt
    1/4 teaspoon cayenne pepper
    1 tablespoon lemon juice
    1 garlic clove, minced
    1 teaspoon Zatarain’s or other creole mustard
    1/4 cup extra virgin olive oil
    1 cup canola oil.
    Prepare pico de gallo sauce: In container of blender, combine tomato, jalapeno, cilantro, onion and chipotle pepper. Process until finely chopped. Transfer to bowl, and set aside.
    Prepare creole mayonnaise: Rinse and dry container of blender. Combine egg, pinch of salt, cayenne, lemon juice, garlic and mustard. Process briefly to mix well. With the blender at medium-low speed, remove small cap in lid, and very slowly add olive oil in a thin stream. Add canola oil in same way. When all oil is added and mixture has thickened, transfer mayonnaise to medium bowl.
    To creole mayonnaise, add pico de gallo sauce to taste. The Chipotle Mayonnaise should have the piquant, smoky flavor of chipotle pepper; it may not be necessary to use all the sauce. Mix well, and adjust salt to taste. Refrigerate until serving.
    Yield: 3 cups.

    If you are making your burgers yourself, then mix in the following:
    1. Ground sage, or poultry seasoning (1 tsp per pound)
    2. Chopped onion (1/2 cup per pound)
    3. 1 T kosher salt (more or less)
    4. 1/2 Tsp fresh ground pepper (per pound)
    5. 1 egg (per pound)
    6. 1 T Worcestershire Sauce (per pound)
    7. 1/2 cup Italian Bread Crumbs (per pound)
    Other yummy additions can include:
    1. Diced green chilis
    2. Smoked Paprika
    3. Grated Parmesan
    4. Sweet Relish
    5. Crumbled bacon
    If you are cooking the premade patties than top with:
    1. Bacon
    2. Smoked gouda cheese
    3. Poblamo Chilis
    4. Marinated artichoke hearts mixed with parmesan

    When making Turkey Burgers I add Tobasco Chipolte Sauce, it doesn’t make it spicy but adds a nice smoky flavor, then I add a spice that I got at Wal-Mart, Roasted Garlic and Bell Pepper. The kids love it and it is so tasty don’t overcook them or they will be really dry.

    Try a basil pesto on the bun, horseradish & mayo, or roasted garlic (lots of flavor). If you have the option of marinating before cooking, dash with soy & coca cola. It will not only make the turkey more flavorful, but also more tender.

    Saute some onions till light brown(caramelized) and mix in the raw turkey burger with sea salt, ground pepper, form the patties an sprinkle n Mrs. Dash on the outside n fry. Don’t over cook they will be dry. They won’t take as long as beef to cook.

    Chow-chow pickles.
    Tomato relish.
    Sliced beetroot.
    If you mean in, add some
    Curry powder (a little will lift it a little, a lot will curry them)
    Mixed herbs.
    BBQ sauce etc

    fry some bacon & crumble it up,mix with meat, add chopped onion,garlic salt&pepper ,you can add crumbles of chedder cheese if you want YUM!!!
